The greenhouses are alive with plants! The radishes, beets and carrots in greenhouse 1 are growing happily and the carrots are now at market. The baby beets are ready, and will be available for several weeks. We have new crops of radishes growing and they will be available for several more weeks. Green onions will be at market the last week in May. Celery transplants went in the ground in the second week of May, and they’ll need some time to mature.
The mixed greens in greenhouse 2 look (and taste) glorious, and the seedlings that have been living on tables are just about ready to be transplanted into the fields. The herbs for flowers, lemon balm and borage, will be an interesting addition to the summer selection of edible flowers. The kitchen herbs are getting ready to take up their spaces in the field beds. The Brussels sprouts and squash that were seeded in March will be transplanted into the fields in late May. We love squash and hope to have a variety of these delicious vegetables growing happily in the field this summer.
